Today, VIVA Chicken celebrated the holiday with television appearances in Greenville and its hometown of Charlotte, where Co-Founder Chef Bruno Macchiavello shared the culinary traditions that inspired the brand and the innovative menu offerings that continue to drive its growth.
Known for its charcoal-fired Peruvian Pollo a la Brasa, VIVA Chicken has spent more than a decade introducing guests to a style of rotisserie chicken built around bold flavor, fresh ingredients and everyday value. Since opening its first restaurant in 2013, the company has expanded to 15 locations across the Carolinas and Utah while carefully crafting and serving more than 5 million chickens along the way.
“For us, National Rotisserie Chicken Day is really a celebration of the tradition that inspired VIVA Chicken in the first place,” said Macchiavello. “Growing up in Peru, Pollo a la Brasa was about more than great food. It was about bringing people together around the table. We wanted to share those flavors, that hospitality and that experience with our guests and that mission continues to guide everything we do today.”

Available Monday through Friday, Daily Features transform VIVA’s charcoal-fired chicken into a variety of Peruvian-inspired dishes, including Chicken Saltado, Verde Chicken Tacu Bowl, Chicken Peruvian Fried Rice, Aji Chicken Salad Bowl and the Inca Burrito.

Daily Features complement VIVA Chicken’s existing value offerings, including its midweek Family Meals at $25.99, reinforcing the brand’s commitment to high-quality meals designed for real everyday routines.
“Rotisserie chicken is the foundation of our brand, but it is also the starting point for creativity,” said Sharyn Knight, Director of Marketing for VIVA Chicken. “Our Daily Features Menu reflects what Viva Chicken has always done well – take an exceptional product and continue finding new ways to deliver flavor, variety and value for our guests.”

VIVA Chicken’s signature preparation process begins with all-natural chicken marinated for more than 24 hours in a bold Peruvian spice blend, then slow-roasted over open flames in custom charcoal rotisserie ovens. Signature sauces and juices are prepared fresh daily, while scratch-made sides and vibrant ingredients help bring the flavors of Peru to every meal.
The company’s commitment extends beyond its menu. Many team members from VIVA Chicken’s original restaurant continue to serve guests today, reflecting a culture built around hospitality, community and long-term relationships. The company is also routinely recognized by guests and local media through Best Of honors across its markets.
As National Rotisserie Chicken Day shines a spotlight on one of America’s favorite foods, VIVA Chicken was proud to celebrate the holiday by sharing the tradition, craftsmanship and innovation that have fueled its growth for more than 13 years.
